Ingredients

For the Almond Crust:

  • ¼ cup coconut sugar (or maple syrup)
  • ¼ cup melted coconut oil

For the Solar Citrus Filling:

  • 1 cup fresh lemon juice (approx. 4-5 lemons)
  • ½ cup fresh orange juice (approx. 1-2 oranges)
  • Zest of 2 lemons and 1 orange
  • ¾ cup maple syrup (or to taste)
  • ½ cup full-fat coconut milk (from a can, chilled)
  • ⅓ cup arrowroot starch (or cornstarch)
  • ¼ tsp turmeric powder (for color and anti-inflammatory properties)

The Alchemical Process

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a bowl, combine almond flour, coconut sugar, and salt. Add melted coconut oil and vanilla extract. Mix until a crumbly dough forms. Press firmly into a 9-inch tart pan with a removable bottom. Bake for 12-15 minutes, or until lightly golden. Let cool completely.
  2. Craft the Filling: In a saucepan, whisk together lemon juice, orange juice, citrus zests, maple syrup, coconut milk, arrowroot starch, and turmeric powder.
